SUPPER FOR SINGLES: SKINNY SOY NOODLES WITH SHRIMP, TOMATOES AND ARTICHOKES

Here’s another recipe that saves almost 200 calories a serving by simply substituting noodles made of tofu for noodles made of wheat or rice.

And for singles with busy schedules, it’s really a winner….a 350 calorie supper that takes only 10 minutes!

SKINNY SOY NOODLES WITH SHRIMP, TOMATOES AND ARTICHOKES

1 package Shirataki Angel Hair or Fettucine Tofu Noodles

kosher salt to taste

1 c peeled raw shrimp, roughly chopped (if using frozen, rinse thoroughly and defrost)

2 t garlic, minced

1/4 c artichoke hearts, jarred and packed in oil,  sliced

1 pint grape or small cherry tomatoes

2 T black olives, sliced

1 handful fresh basil, sliced in chiffonade

1 handful fresh spinach

1 t fresh lemon juice

2 T feta cheese, crumbled

pinch red pepper flakes

Rinse tofu noodles well with cold water in a colander in the sink. Toss with salt and let drain.

Season shrimp with salt and pepper.

Over medium high heat, quickly stir fry the shrimp until almost cooked through, about 4 minutes.

Add garlic and the oily artichokes and cook 1-2 minutes more, until garlic is fragrant but before it browns.

Add tomatoes, olives and spinach and stir another minute until the tomatoes are warm and the spinach just begins to wilt.

Add basil, lemon, noodles and pepper flakes toss well to incorporate.

Taste for seasonings adding more salt and red pepper if needed.

Top with feta and serve.

PLAY WITH YOUR FOOD

If you like a dish with more bite, use arugula rather than spinach.

You can use chicken instead of shrimp, sun-dried tomatoes instead of fresh, and capers instead of olives.  Or you could add loads of parsley, zucchini or bell peppers.  There are countless variations you can create depending on what you’re craving…!
