IDIOT-PROOF OVEN BAKED WILD RICE and MAGIC WILD RICE

If you don’t own a rice cooker, or even if you do, here’s the absolute easiest way to cook wild rice that you’ll mix with Cauliflower Rice to make Magic Wild Rice.

It takes, literally, just 5 minutes to prepare, and 1 hour in the oven…and during that cooking time, you don’t even have to look at it!

Remember, even if you’re single, make the full amount.. It freezes beautifully and you’ll love that inventory!!!

OVEN BAKED WILD RICE

2  1/3 cups water

1  1/2 cups  Lundberg Wild Rice Blend

1/2 t salt

Measure your water and put in an oven and microwave safe dish that is twice as deep as the ingredients. (I prefer this Corning-ware dish you see because it cooks very evenly this way. )

Put the dish full of water in the microwave for 2 and a half or 3 minutes so the water begins to boil. Pull it out and immediately toss in the rice and salt, stir and cover tightly with foil. (I usually cover with two sheets to make sure it is really tight.

Stick it in the pre-heated 375 degree oven and TURN ON THE TIMER (big mistake when I didn’t) for 1 hour.

When the bell goes off, remove the foil and fluff with a fork.

(Note: this method works just as well for brown rice.)

TO MAKE MAGIC WILD RICE

Let your cooked wild rice rest another few minutes to dry out a bit before mixing it with Cauliflower Rice. You can do the standard 50/50 mix for magic rice to cut calories in half or…since wild rice is so flavorful and has so much texture…use just one third wild rice and two thirds cauliflower to really reduce the calorie load.

That’s it… Sooooo easy!!!!  Don’t forget, Magic Rice of any type, brown or wild, freezes beautifully… Use quart size freezer bags, not larger, for easy thawing.  When time to use, just pop the frozen rice out of bag, plop in a bowl and microwave, uncovered and on high, for 3 minutes.  Instant gratification.
