When we first started eating more greens, I missed the sweet and tart salad dressings that I, and my kids, used to love. But then we discovered this upside down version of a long time favorite.
My old recipe called for one and half cups of olive oil (950 calories!) and 1/4 cup of regular maple syrup (200 calories!)
But by cutting the oil to 1 Tablespoon (120 calories) and using sugar free maple syrup (only 20 calories!) the fat and calories are reduced but the taste is not!
SKINNY MAPLE-BALSAMIC VINAIGRETTE
1/4 cup balsamic vinegar
3 T. Mrs. Butterworth’s Sugar Free Maple Syrup
2 T. Dijon mustard
1 T. minced garlic
1/2 t. salt
1/4 t. black pepper
1 T. olive oil
Put everything in a mason jar or old jelly jar and shake like crazy.
Serve over a big salad and add a few chopped walnuts, some dried cranberries, slivered shallots and a scant shower of feta cheese. Gorgeous.
PLAY WITH YOUR FOOD
Try drizzling it on roasted butternut squash, roasted Brussels sprouts, roasted fennel or even over roasted fruit, like pears.
Or use it on a salad with a little left over grilled salmon and any of the other roasted veg and fruit listed above and you have a meal!!
