If you think grabbing a breakfast sandwich from the drive through is the quickest way to get your morning meal, consider this fistful of skinny deliciousness instead….

With an inventory of prepared veg and a few products from the skinny shopping list on hand, making this hearty breakfast at home takes no more than 5 minutes and saves you a ton of calories.

Here’s how it adds up:

Instead of an 80 calorie whole egg and a 100 calorie slice of cheese, this one’s made with 30 calorie Egg Beaters and 40 calorie piece of  Veggie Slices cheese.

Rather than a 350 calorie bagel and a regular slice of ham, here we’ve used a 110 calorie Bagel Thin and just one piece of thin  sliced smoked ham which has just 10 calories.

All in, this big breakfast has only 200 calories!  Which seems like a bargain when compared to the ham, egg and cheese bagel sandwich from Dunkin Donuts which has  510 calories and 16 grams of fat!

And, since this homemade quickie also has a heap of grilled veg and some freshly sliced tomatoes, it’s loaded with vitamins, fiber, texture and taste that will fill you up faster– and keep you full longer –than any drive through version.

So eat up,  Morning Glories, this will make you shine!


1 Bagel Thin (Multi-Grain, Whole Wheat or Plain)
1/4 cup EggBeaters
1 piece of Veggie Slices cheese (any variety you like best)
1 slice of Buddig Deli Cuts Sliced Smoked Ham
Smear of grainy mustard or fat free mayo (I like mustard, but use whichever you prefer.)

1-2 cups of leftover grilled or roasted vegetables. (here we’ve used peppers, onion, zucchini and eggplant)
2-3 slices of fresh tomato


Heat a non-stick pan sprayed with cooking oil and wait 20 seconds before pouring the Egg-Beaters.

Flip the egg as soon as it sets (about a minute), and cook another 30 to 45 seconds until it’s done.

Microwave your leftover veg and your Veggie Slices cheese for 30 seconds.  Add the ham and nuke just 10 seconds more.

Stack the egg, cheese, ham and veg onto a toasted Bagel Thin smeared with mayo or mustard any way you’d like and dig in!

    Eww. Eggbeaters taste like soap. I’m not sure why people use them when you can beat up a dozen egg whites and 3 yolks, and put them in the refrig for a week, or the freezer for months.

      Well, around here we can’t have any yolks…My parents live here and my father had quadruple bypass last year. The surgeon was very clear about how careful we have to be about cholesterol. But, in general, we tend to use liquid egg whites more than the yellow ones (which are also made with whites) but many people like them so I always offer them the option. And, either way, at only 25 calories a quarter cup, the whites (or Eggbeaters) drastically reduce calories in dishes that call for eggs and I just find the carton type insanely convenient… But if you like the real thing, go for it..!
