This is a quick and easy way to Re-Use, Re-Purpose, Re-Cycle any of the recipes for Roasted Magic Mushrooms.
Though you probably could have figured this out on your own, I wrote it out so you could see how many calories are in each ingredient that matters. As you start to improvise and come up with your own kitchen creations, you need to have a feel for the numbers in the other ingredients so you keep things skinny. I don’t, however, bother counting the calories for the veg…they’re so good for you, it’s not worth doing the math!
MAGIC MUSHROOM OMELET
3/4 c. Egg Beaters or All Whites (about 90 calories)
1 c. Magic Mushrooms, sliced
1 handful of fresh spinach, chopped
1/2 c. Oven Roasted Caramelized Onions
2 slices of Buddig deli slices smoked ham (about 20 calories)
1 T. 2 % grated cheddar (about 25 calories)
Spray your non-stick pan with cooking spray and let it heat up on medium high for 20 seconds before adding the egg product.
Add the other ingredients and reduce heat to medium low, when it appears almost set, flip it closed and eat!
